This is one of the cookies we bake for this Chinese New Year. It's delicious. I must admit that I pinched quite a bit before they were packed into the jars! :P
Cheesy Coin cookies
1 C. all-purpose flour 1/4 t. paprika 1/4 t. dry mustard (Enlish mustard powder) 1/2 C. lightly salted butter 1 egg yolk 1 C. grated chedder cheese a few T. milk for moistening
Sift all dry ingredients together. Cut in butter until the mixture resembles coarse crumbs. Add yolk & cheese. Mix quickly to form a dough. If the dough is too dry, add a few T. of milk. Wrap the dough in cling wrap & refrigerate for few hours until firm. Preheat oven to 170C/350F. Lightly flour the table. Roll out the dough to 3mm thick. Use a round cookie cutter, cut out coin size cookies. Space them out slightly on an ungreased tray. Pierce several times with a fork. Bake for 10-12 min or until golden.
