and the first loaf I did turned out like a football - very disappointing. I changed bread mixes and use Defiance White Crusty Bread Mix - this works best. I use this recipe:

Small Loaf:

200ml cold tap water
2 cups/320g Bread Mix
1 1/4 teaspoons Yeast

This never fails but I usually just do dough and then create weird and wonderful breads with this dough and I have a great recipe for caramel swirls if you want.
