Hi,
There is a product called "insta-gel" that can be purchased at bakery supply outlets. One teaspoon for every two cups of whipping cream does a good job of stabilizing whipped cream.
Also here is a recipe for making whipped cream hold up!
Ingredients:
1 tsp unflavored gelatin 4 tsp cold water 1 c heavy whipping cream, chilled 1/4 c 10x sugar
Method:
Sprinkle gelatin over water in small pan, allow to sit 3 minutes. Place pan over low heat; stir constantly until gelatin dissoves about 3 min. Remove from heat and cool slightly. Whip cream until slightly thickened. Slowly beat in the sugar; then slowly beat in gelatin mixture. Whip at high speed until stiff.
