Hi all Kitchenlinketts!! Here is a great chocolate cookie with a hint of coffee. Mocha Chunk Cookies 2 1/2 cups all-purpose flour 1/3 cup unsweetened cocoa powder 1/2 tsp. baking soda 1/4 tsp. salt 2 tsp. instant coffee powder 2 tsp. coffee liqueur ( like Kahlua ) 1 cup granulated sugar 3/4 cup dark brown sugar 1 cup butter,softened ( no substitutes ) 2 large eggs 10 oz. semi-sweet chocolate ,chopped into chunks
Preheat oven to 300 F. Combine flour,cocoa,soda and salt. Mix well with a whisk.Set aside.
In a small bowl,combine the coffee powder and liqueur, mixing to dissolve powder,and set aside.
In a large bowl,combine both sugars ; add butter and mix well.Scrape down sides of bowl. Add eggs and coffee mixture, and beat at medium speed until smooth.
Add flour mixture and chocolate chunks.Blend at low speed just until combined. Do Not Overmix!! Drop dough by TBSP. onto ungreased cookie sheets. ( I use parchment paper )Bake cookies at 300 F. for 20-22 minutes. Immediately transfer cookies to wire rack to cool completely. If not sure about time, always underbake these. They do tend get hard if overdone.But they are worth it!!
