BANANA NUT BREAD

2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts
1 egg
3/4 cup firmly packed brown sugar
1 tablespoon vinegar
1/2 cup undiluted Carnation Evaporated Milk
1 cup mashed ripe banana
1/4 cup butter, melted

Sift flour, baking powder, baking soda and salt together. Stir in nuts.

Beat egg. Add sugar and beat until light and creamy.

Stir vinegar into evaporated milk; add with, banana and butter to egg mixture. Stir liquid ingredients into flour mixture until dry ingredients are moistened. Pour into buttered loaf pan (8 1/2x41/2x 21/2-inch).

Bake in moderate oven (350 degrees F.) about 1 hour. Allow to cool, and store about 24 hours before slicing.

Makes 1 loaf
