ORANGE-NUT CAKE
3/4 cup butter or margarine 1 cup sugar 1 tablespoon grated orange rind 1 teaspoon vanilla 3 eggs 1 cup orange marmalade 1 cup chopped nuts 3 cups sifted all-purpose flour 1 1/2 teaspoons baking soda 1 teaspoon salt 1/2 cup orange juice 1/2 cup evaporated milk Florida Orange Topping (recipe follows)
Cream together butter, sugar, rind and vanilla until fluffy. Add eggs, one at a time, beating well after each addition. Stir in marmalade and chopped nuts.
Sift together flour, baking soda and salt. Add to first mixture alternately with combined orange juice and evaporated milk. Turn into greased and lined 9-inch tube pan.
Bake in moderate oven (350 degrees F) 1 hour. Cool cake in pan for 10 minutes.
Remove from pan. Spoon Florida Orange Topping over hot cake. Serve warm or cold.
FLORIDA ORANGE TOPPING: Combine 1 cup orange juice and 1 cup sugar. Stir over medium beat until sugar dissolves.
