thanks again to everyone for your help. we decided to do just a turkey breast which we stuffed with vidalia onions and celery. then i rubbed the whole thing down with olive oil and rubbed in some good paprika and my own poultry seasoning so that the skin would get crispy. we then placed a roasting pan directly on the briquettes and filled it with water. the turkey went in our grilling wok on the rack. we found that we had to fill the water in the roasting pan about every 20 minutes or it would begin to burn. it cooked for about 3 hours and was soooo good. thanks again for such great advice. i think we have a new thanksgiving tradition now.:0) |
