Kolaczki Cookies
1 pint vanilla ice cream 1 lb. margarine 4 cups all-purpose flour 2 tsp. sugar pineapple, apricot, raspberry or other prepared pastry filling powdered sugar
Mix together softened margarine, melted ice cream, flour and sugar. Mix dough well; cover and refrigerate overnight.
On a floured surface, roll small part of dough about 1/8-inch thick. Cut into 2-inch squares, spoon a small amount of filling into center of each square. Fold two opposite corners of dough over center.
Bake on ungreased cookie sheet at 400 degrees for 10 minutes. Cool; sprinkle with powdered sugar. Yields 100.
