BEEF RANCHERO ROLL UPS
6 (8- to 10-inch) flour tortillas, warmed* 1 lb. ground beef or turkey 1/2 of a medium onion, chopped 1 (14 1/2 oz.) can Del Monte Zesty Diced Tomatoes with Mild Green Chilies, undrained 1 (15 oz.) can black beans or kidney beans, drained FOR SERVING: 1 1/2 cups (6 oz.) shredded cheddar cheese green onion slices (optional)
Cook meat and onion in large skillet over medium heat until meat is browned; drain. Season with salt and pepper, if desired.
Add undrained tomatoes and beans to skillet; cook over medium heat 5 to 7 minutes, stirring occasionally, or until liquid is evaporated.
TO SERVE: Fill each tortilla with meat mixture, cheese and sliced green onions, if using. Roll up and top with sour cream, sliced avocado, shredded lettuce and chopped cilantro, if desired.
*TO WARM TORTILLAS: Wrap tortillas in foil. Heat tortillas in 350 degrees F oven 10 minutes or until warm.
