LEMON-GARLIC CHICKEN WITH BLONDE BBQ SAUCE2 lbs chicken FOR THE MARINADE:1/3 cup lemon juice 3 tablespoons Dijon mustard 1/4 teaspoon garlic powder FOR THE BLONDE BBQ SAUCE:2 tablespoons light mayonnaise 2 tablespoons barbecue sauce 1 teaspoon chili powder 1/4 teaspoon paprika FOR COOKING:3/4 cup Italian-seasoned breadcrumbs 1/4 cup parmesan cheese TO MARINATE THE CHICKEN:Combine lemon juice, mustard and garlic in large bowl, reserving 2 tbsp. Set aside. Add chicken to lemon juice mixture in large bowl, turning to coat. Cover and marinate in refrigerator 30 minutes. TO MAKE THE SAUCE:Combine reserved 2 tbsp lemon juice mixture with mayonnaise, barbecue sauce, chili powder, and paprika. Cover and chill. TO COOK:Combine breadcrumbs and cheese. Remove chicken from bowl, discard marinade. Dredge chicken in breadcrumb mixture and place on broiler pan coated with spray. Bake at 400 degrees F for 45 minutes or until golden brown and cooked through. Serve with the Blonde BBQ Sauce. Servings: 4 Source: Cooking Light, April 1997
