SHRIMP BRUSCHETTA

"Brushetta comes from the Italian word "buscare", which means "to roast over coals". This recipe takes on a seafood twist with the addition of Old Bay Seasoning and shrimp."

1 1/2 cups water
2 teaspoons Old Bay Seasoning, divided use
3/4 pound medium shrimp, peeled and deveined
2 tablespoons finely chopped green onion
2 tablespoons finely chopped red bell pepper
1 tablespoon chopped fresh parsley
2 teaspoons water
1 teaspoon olive oil
1 egg white
1 loaf baguette-style French bread
mayonnaise

In a saucepan, combine 1-1/2 cups water and 1/2 teaspoon Old Bay Seasoning. Bring water to a boil. Add shrimp and cook 3-5 minutes or until shrimp turns pink. Drain well and let cool. Finely chop shrimp.

In medium bowl, mix shrimp and remaining Old Bay Seasoning with next 6 ingredients. Stir until well blended; set aside.

Cut bread diagonally into 1/2-inch slices and lightly toast. Spread bread slices lightly with mayonnaise. Spoon shrimp mixture evenly over bread slices. Place bread on baking sheet, coated with cooking spray.

Bake at 350 degrees F for 8-10 minutes or until thoroughly heated and lightly browned.

Makes 24 (1 slice) servings
