HIGH HAT MEAT LOAVES
1 1/2 pounds ground beef 1 cup herb-seasoned stuffing mix 1 (8-ounce) can (1 cup) seasoned tomato sauce 1 slightly beaten egg 1 teaspoon salt 1/4 teaspoon pepper 1 envelope (4 servings) instant mashed or whipped potatoes Dash paprika 1 medium tomato, cut in 6 wedges 1/2 cup shredded sharp process cheese
Combine ground beef, stuffing mix, tomato sauce, beaten egg, salt, and pepper. Blend thoroughly. Shape mixture into six 4x2- inch loaves. Arrange in shallow baking dish so that loaves do not touch one another. Cover tightly; freeze.
TO BAKE: Bake covered in moderate oven (350 degrees F) 30 minutes. Uncover and continue baking 30 minutes or till done. Remove loaves from oven.
Turn oven to 450 degrees F.
Prepare mashed potatoes according to package directions, but adding 2 tablespoons additional milk. Spoon a dollop on each meat loaf. Sprinkle with paprika. Top with tomato wedge; sprinkle with cheese.
Bake 5 to 10 minutes or till potato and tomato are hot.
